Ingredients of Nihari Masala are as under:

  1. ·       Hari elaichi (Green cardamom) 4-5
  2. ·       Badi elaichi (Black cardamom) 3-4
  3. ·       Darchini (Cinnamon sticks) 3-4
  4. ·       Badiyan ka phool (Star anise) 2
  5. ·       Laung (Cloves) 8
  6. ·       Sabut dhania (Coriander seeds) 2 table spoons
  7. ·       Zeera (Cumin seeds) 1 table spoon
  8. ·       Saunf (Fennel seeds) 2 table spoons
  9. ·       Sabut kali mirch (Black peppercorns) 1 table spoon
  10. ·       Jaifil (Nutmeg) 1/4 piece
  11. ·       Javatri (Mace) 1 piece
  12. ·       Pipli (Long pepper) 2
  13. ·       Sonth (Dried ginger) 1 small piece
  14. ·       Kala zeera (Caraway seeds) 1/2 table spoon
  15. ·       Tez paat (Bay leaves) 2
  16. ·       Namak (Salt) 1 table spoon
  17. ·       Lal mirch powder (Red chili powder) 1 table spoon
  18. ·       Haldee powder (Turmeric powder) 1 tea spoon
  19. ·       Kashmiri lal mirch (Kashmiri red chili) powder 1 table spoon (optional)
